Hey now! This month I made something that my mom typically cooks a lot at home and that's Vietnamese caramel chicken. This is super easy to make and you don't need a lot of ingredients.. which was to my surprise because I just assume you need a lot of random stuff.. but ya don't, so cool! My mom can't really give me recipes in exact measurements because it's just to the taste.. so I just looked up a few recipes and voila! Vietnamese caramel chicken. I just took the recipe from Rasa Malaysia and just added granted ginger to the recipe.
I was pleasantly surprise that it came out pretty damn good. The only part I struggled with was the browning of the chicken.. I may have over thought about it because it was taking too long to brown so I cranked up the heat and then the chicken started spitting oil at me.. haha.. but everything was resolved and it turned out fine in the end. I sent a photo to my mom and she said "Good cook babe. Mom guess your honey enjoying your foods a lot." lol.. indeed he is.
