Bunny in the kitchen!.. Happy Mother's Day!


Yes! After seeing photos of these wired bunny headbands I finally stumbled upon one and bought it! Now I'm in this huge kick of buying all different kinds of patterns.. Thanks Ebay.. teehee. Anywho.. MVamos and I went grocery shopping yesterday at our usual Korean market, Zion, and I found a great deal on a pack of portobello mushrooms! I made a fairly simple dish which was stuffed portobello mushrooms with whole wheat couscous and sweet potatoes with sauteed garlic spinach as the side. Pretty basic stuff.. fairly similar from the previous post but this was all vegetarian. I wish I had a photo of it.. but the plating was ugly so it was unacceptable to post something that didn't look appetizing. I wanted to be more creative on the stuffed portobello mushroom, but MVamos is in a healthy kick so that his arm heals faster and better.. so I kept it simple.

The above photo is me in MVamos' tiny studio kitchen cooking dinner. It's a very tiny work space and it can get overwhelming for me especially if there are many things lying around.. oh anxiety. Hopefully, we'll find a place with a larger kitchen I can work with in a few months.

Also! Today's is Mother's Day and I want to take this time to thank my mummy dearest for being the best mummy she can be! My parents came to America in the mid 80s after escaping Vietnam during a horrific time. They've done everything they could to provide for their family even when they had absolutely nothing. I know many Asian immigrant families who work all day/all night to provide for their family and are unable to give their children a childhood because they were absent, but my parents were able to balance work and family even if it meant to sacrifice financially. My mummy has gone through so many emotional pains and heartaches throughout the many years of being in America, but it made her stronger and she continued to persevere. I know I may not show it, but I love her so dearly. I love you mummy! (I believe she is 28 years old in this photo.. like me!.. holy crap I'm 28.)
