Mango Shrimp Ceviche.


MVamos and I went on our biweekly grocery shopping trip to Zion market because there are always good deals on produce and all that jazz. One of the best deals that I found were the Manila mangoes- they were only $4.99 for a case.. which probably had about 22 mangoes! That's a lot of mangoes. Anywho, I had planned to make shrimp ceviche and was inspired by the mangoes when we arrived home.. Mango shrimp ceviche! I love ceviche.. it's easy to make, inexpensive, and healthy. I would have loved to add some jalapenos, but MVamos can't really handle spicy. Here are the ingredients.. (sorry no measurements... I just eye-balled it)

Shrimp
Red onion
Tomatoes
Cilantro
Mangoes
Lemons
Salt
Black pepper
